Vanilla has a soft, sweet fragrance and flavour. The grades of vanilla vary depending on their moisture content and appearance. Grade A beans are very dark in color, pliable and moist with a moisture content ranging from 30%-35%. These are the highest grade vanilla beans available.
Slit the pod open along its length, then scrape out the small, sticky seeds using the tip of a small, sharp knife. Add the seeds directly to dishes to flavour them, or add pods to boiling milk to infuse it with a vanilla flavour.
