Organic colors come in a relatively limited palette. Interest in natural food
coloring picked up in the 1970s, when the Food and Drug Administration pulled the
popular Red Dye No. 2 synthetic food coloring because of fears that the coal tar
substance could cause cancer.
Artificial or synthetic colors are often made from petroleum-based substances and have
been associated with health conditions such as attention deficit disorder in children.
The FDA says its approved color additives are safe.
Natural Colours are extracted from coloured vegetables such as paprika, turmeric, annatto
and spinach. Natural colours are suitable for applications such as curries, coloured pasta
, lollies etc. They come in oil and water soluble varieties and are not as vivid as synthetic
colours as they could react with other ingredients. The vegetable flavour in natural colours
is removed as much as possible as part of the extraction process.
